The Cookies for the Goûter Tricot

Since January 2018 I am hosting a Goûter Tricot in my atelier in Saint Louis, France. It is the equivalent of a Knit Café: I have a kettle ready with teas and infusions, and cookies! This happens normally one a month, on the second Saturday of the month, from 4pm to 6pm. 

I live in a very rural area and knit café are a novelty regarded as sinful enjoyments. People from small Alsatian villages do not comprehend the joys of knitting (or stitching) and have some fun all together, so the cookies end up all in my belly :)

This goûter tricot are not, for now, a success: at the busiest one we were 4. Most of the time I am alone. But I won't desist! I know countryside French are not used to this kind of get togethers, but they will not have me ;)

This is the recipes for the cookies I duly make every month!

They are quick, they are good, and you can make them inbetween rows or rounds ;)

Ingredients for about 30 cookies

100 g of butter, at room temperature

125 g of brown sugar

1/2 a teaspoon of cinnamon

1 egg

150 g of flour

5 g of chemical yeast

150 g of chocolate chips (a mix of black and white chocolate)

Instructions

Turn on the oven at 180° (350 F).

In a bowl and with a wooden spoon, mix the softened butter, egg, sugar and cinnamon. 

Add and mix, little by little, flour and yeast. 

Add the chocolate chips.

Combine until you have a consistent dough, with no lumps. 

Helping you with 2 spoons, make small balls of the dough, and place them, on a oven tray covered with parchment. In the oven they will expand, so lay the balls evenly spaced. 

Cook for 12 minutes or until the edges of the cookies are slightly coloured. 

Let the cookies cool before to transfer them on a plate. 

Eat and be merry!
